Homemade butter-free spook-tacular cookies

Ingredients:

  • 1 egg
  • n
  • 80 g brown sugar (or coconut sugar)
  • n
  • 50 g odorless coconut oil
  • n
  • 150 ml single cream
  • n
  • 250 g plain flour
  • n
  • u00bd tsp baking powder
  • n
  • Pinch of salt
  • n
  • 1 tbsp freshly ground cinnamon
  • n
  • 1 tsp four-spice blend (nutmeg, ginger, cinnamon and cloves)

Preparation:

  1. In a large bowl, mix the egg and sugar together. Add the oil (in liquid form) and the cream, and then mix again.
  2. n
  3. Then add the rest of the dry ingredients: the flour, baking powder, salt, cinnamon and fouru2011spice blend. Mix until the dough has an even consistency.

  5. Sprinkle some flour on the worktop and roll out the dough (approximately 2 mm thick). Place the rolled-out dough on a sheet of parchment paper and refrigerate for at least 30 minutes.

  7. Preheat the oven to 180u00b0C/360u00b0F (fan-assisted oven). Cut out the cookies with a pastry cutter and bake in the oven for 13 to 15 minutes.

  9. Once baked, allow the spook-tacular cookies to cool completely on a rack before tasting.
